MDC’s Miami Culinary Institute to Kick-Off the Culinarium Enthusiast Learning Series Sept. 13

Miami, August 30, 2011 - Individuals who are passionate about the preparation and enjoyment of exceptional cuisine will have a chance to sink their teeth into some of the food industry’s best educational and entertaining demonstrations for culinary enthusiasts.

Beginning next month, the Miami Culinary Institute (MCI) at Miami Dade College (MDC) will offer a few of the world’s best and most cutting-edge chefs, sommeliers and beverage producers to lead participatory classes as part of its Culinarium Enthusiast Learning Series.

The classes will focus on several areas, including general culinary arts, baking and pastry making, wine, health and wellness, and sustainability. All classes will be held in the Institute’s state-of-the-art food and wine demonstration theater. 

The first class in the Culinarium series begins Tuesday, Sept. 13 with Drinking South America: A Tour of the Wines of Argentina, Chile and Brazil with MCI’s Advanced Sommelier Sarah Brownell. In this class, participants will explore the wines of South America; learn the differences between Malbec and Cabernet Sauvignon, and all about the major winemaking regions at $40 per person.

The next class in the series will be held Thursday, Sept. 15 with the Basic Knife Skills with Chef Collen Engle. For $55 per person, Basic Knife participants will learn to master some of the most important skills of any culinarian’s repertoire, including how to choose a good knife set, types of knives, proper sharpening, handling and storing of knives, and techniques in slicing, dicing, julienne and chiffonade. 

Also in the series, James Beard award-winning chef and MCI council member Michael Schwartz, of Michael’s Genuine Food & Drink, will present Heritage Meats and the Wines That Love Them, with sommelier Eric Larkee in a two-part class on Sept. 19-20 at $150 each.

Schwartz will demonstrate several recipes from his new cookbook, Michael’s Genuine Food: Down-to-Earth Cooking for People Who Love to Eat, in which all participants will receive an autographed copy, culminating with dinner in the spectacular eighth-floor restaurant. And much more!!
