Tuyo, at Miami Dade College’s Renowned Culinary Institute, Continues to Tantalize with Inventive Spring Dishes by Executive Chef Victor Santos

Miami, April 25, 2014 - Miami Dade College’s (MDC) acclaimed restaurant, Tuyo, is blazing a new trail this season with Executive Chef Victor Santos and a spring menu composed of  tantalizing contemporary American dishes accentuated with French, Asian and Latin flavors.

The exciting spring lineup features starter plates such as grilled Portuguese octopus, Corvina ceviche, creamy butternut squash kabocha soup, and seared loin and tartare of ahi tuna. Main plates include pan-roasted American red snapper with pineapple and black bean salsa, crispy-skinned filet of loup de mer with bouillabaisse-infused couscous and tasting of lamb and spring vegetables, among others delicacies.

Located on the top floor of the groundbreaking Miami Culinary Institute (MCI) at MDC, the roof-top restaurant offers one of South Florida’s most elegant dining experiences, first-class service and an unparalleled panoramic view of the downtown skyline and Biscayne Bay. Tuyo was recently ranked by opentable.com users as #1 in Miami-Dade County for contemporary American cuisine, and among the top 10 restaurants in the categories of service, romance and scenic view.

As evident with Tuyo’s spring menu, Santos has a passion for contemporary American and classical cooking. The Brazilian native emerged on the Miami culinary scene a decade ago after graduating from the Art Institute of Fort Lauderdale and quickly made his mark in the restaurant business.
